A good meal to make for the Essigs.

In case any of you have Essig's coming to your homes for dinners I will give you a heads up for a recipe they love.

White Chicken Chili

1 Large onion (chopped)
4 Cloves minced garlic (I use the already minced HUGE jar from costco/sams)
2 4oz cans of green chiles (drain them)
2 teaspoons of cumin
1 teaspoon of oregano
1 teaspoon of salt
4 cups chicken broth
2 cans cannelini beans - drained (or any type of white bean)
3-4 cups of chopped chicken

If you like it spicy you can add some jalapenos (1-2) and cayanne pepper (a few shakes).

Grab your biggest soup pot. Boil onion, garlic, and (maybe jalapenos) in 1-2 cups of the chicken broth until tender. Add everything but the chicken. Bring to a boil, add chicken, cover and simmer for 20-30 minutes. You could add chicken sooner but I didn't want it to get overcooked so I added it last.

Top it with whatever you want - We highly recommend sour cream, mozarella cheese, and lots of CILANTRO!

I do! I do! I'm glad my mom directed me to your blog for this recipe... I'm going to try it tonight and then maybe again when we get to have the Essigs for dinner :)
